We absolutely love Cafe Rio and go there almost every Friday. My mom usually comes with us, today we missed her, but Lindsey (my sister) and Jeff (Rodger's brother) joined us today. For those of you intrested in a couple's special, here is what Rodger and I get. We share a Cafe Rio Chicken Salad and then get chips and queso with a drink. It's the perfect meal for two. Next time you go you should try it out.

We tried to eat at Cafe Rio last time we were in UT but the line was almost out the door. Unbelievable! I'll just have to dream about the Chicken Salad until our next trip.
Yes I hate missing Cafe Rio Friday. Had to go to lunch with a friend though. Won't miss it again. Chelsea and I went to lunch at Bajio and a lady in line was telling us how many calories the salads had in them. She informed us that Cafe Rio has 2,000calories! Chels said, "don't tell my Mom that!" But just so you know Mindi, all you do is tell them what you want on it and I know it isn't that much. I get them every friday and I can still fit through the door. You eat half for lunch and save the other half for dinner, unless Ash and Linds get to it, which is most of the time. Good times with Cort and Rodger.
That's disgusting that they are so high in calories! Well, at least Rodger and I share one. Don't let that not make you go Mindi, it's worth it.
I love Cafe Rio. I always get the pork salad. We like the chips and queso too.
According to The Daily Plate, the Pork Barbacoa Salad with house dressing is about 800 calories. The Chicken variant is about 250 calories less.

This site has different amounts for the content of the salad and comes up with 1300 calories.
My guess? plan for 1100 calories and be happy if it is less. I don't use the dressing which is about 250 calories or so.
Also, this estimate quotes 6 oz dressing and 1/4 guacamole, which is wild - never had that much of either on my salad.
